Made in Gloucester by Charles Martell, it has a pungent aroma, with a rich savoury flavour that is not as strong as its odour. Curds are washed in perry made from a variety of pear called Stinking Bishop. Like Vacherin Mont d’Or, the curds are ladled directly into moulds and then wrapped in a bark collar.
