Description
Randolph Hodgson from Neal’s Yard Dairy wanted to bring back the traditional way of making Stilton using unpasteurised milk. He formed a partnership with Joe Schneider and they now produce this cheese that is named after the original village of Stilton. It has a richer paste and spicier blue than traditional Stilton which must be made using pasteurised milk.
