This cheese has been made famous because of the person who lovingly looks after it, helping it to mature to it’s upmost potential. WaloVon Mühlenen is the 5th generation of his family to affineur cheeses. His family history with cheese dates back to 1867. He sources raw milk cheese from only the very best cheese-makers and farms and builds a relationship with the cheese-makers to achieve the highest possible standards, he then selects from them only the best cheeses.
He nurtures them for up to 10 months in special cellars with optimal conditions, and encourages cultures to build up over time. During this time he turns and brushes the cheeses are turned, until they reach their peak.
We love this cheese with wines from the Jura, as well as Sherry.
