One of the oldest known cheeses, it is aged in moist, cool caves in the limestone mountains of southern France, and is the second most popular cheese in France after Comté. Alongside Stilton and Gorgonzola, Roquefort is one of the three greatest blue cheeses in the world. It has a lingering, pleasant flavour, slightly sweet and distinctly salty. Berger is the smallest of the seven producers of this style of cheese.
