Description
Like many things in the world of cheese, Fourgerus was invented by accident. Robert Rouzaire was trying to perfect a new cheese and kept getting a flaw on the white rind. So he placed a dried fern on top during the maturing process, to hide the flaw. The result was a Brie-like cheese with earthy characteristics imparted from the fern. Fougerus has a buttery, creamy mouthfeel with earthy, mushroomy flavours and savoury vegetal notes.
Try pairing with Flûte Enchantée or other sparkling wine.
